Cilantro Avocado Dressing

This dressing is best when avocados are ripe and abundant. While this dressing works well on green salad, it also adds another dimension to tofu or tempeh and turns leftover grains or beans into a delicious salad. From Nutrition CHAMPS: The Veggie Queen’s Guide to Eating and Cooking for Optimum Health, Happiness, Energy and Vitality (2014) Makes about ¾ cup

  • 1 clove garlic
  • ¼ cup packed cilantro
