What you get from this class: A sense of success in fermentation and coaching on how to make at least two different types of ferments. A list of ingredients that you will need (it is short) and an equipment list, which can be simple or elaborate. It’s your choice. I highly recommend going the simple route until you become more “serious” about fermentation.
Not only will you feel wildly successful after you make these fermented foods, your gut will thank you because it will have more happy microbes feeding your microbiome. But enough about that…Let’s get to the good stuff.
In this 1 + hour class Jill will show you to how make simple ferments of the season: Sauerkraut of a couple of types, Ginger (and turmeric) carrots and one or two more, depending upon vegetable availability. What you will truly learn is process, which can be used with many different vegetables: either brine ferment or a dry ferment.
You will need a bit of equipment (you will receive the list within a couple of days, once you register) but not necessarily anything fancy.
Mostly it will involve a one pint wide mouth canning jar for each ferment. Although there are other equipment choices. You can choose one item to ferment or all of them. Although if you have no experience, I suggest choosing just one or two. You will be making these in in the comfort of your own kitchen as we will meet via Zoom. Jill will demonstrate how to make all 3 of them.
You will get the simple recipes, the equipment list and all the instruction that you need to be successful with these fermented foods. Jill will discuss the science of fermentation, what to look for and potential pitfalls, as long as storage suggestions. In a week or less from the class time, you might be eating the fermented food that you have made with love, time and salt.
Note Salt is an important part of this process, so please don’t ask if you can ferment without salt. My answer is, “Not very well.” Your ingredient list will let you know what type(s) of salt work well. Jill will be available via email for follow up questions, and to provide patience and support.
The class will be recorded and available to you. So there are no refunds once you register.
