Fall is a wonderful season with a bounty of produce. Apples, pumpkins and other squashes plus grains, beans and nuts are all in their peak. As the weather cools warm spices can be introduced to create comforting food that excites the palette. The bounty of fall is a wonderful excuse to try new recipes and revive some of your old favorites. These 15 Vegan Pumpkin Recipes from around the web are a great place to start. (The pumpkin bars contain an egg so please substitute 2 tablespoons ground flax seed and 3 tablespoons water, mixed well, for that egg. So sorry…)

Awesome collection. Thank you for including my vegan pumpkin falafel. Pinning it.

FYI, the Pumpkin Pecan Bars includes 1 egg, so it’s not vegan. Any suggestions for a replacement ingredient?

Instead of an egg you can use a “flax egg”. 1 1/2 tablespoons flax mixed with 1/4 cup liquid. Let sit and get gummy and then use.
Thanks for the heads up on that recipe. My virtual assistant put them up while I was traveling and I guess that one slipped by her.
