Starting your holiday meal with a healthy soup and salad can aid digestion and help prevent overeating. Not everyone will choose to indulge but if you make it and there are leftovers, so much better for you.

Vegan Holiday Salads:
If you have “healthier” eaters, they might appreciate a raw kale salad. This one is highly adaptable. I like to add a bit of fruit such as apple or pear for sweetness.

Jill, I have your wonderful The New Fast Food cookbook which I love. Yesterday, I made the Autumn Soup for a Chilly or Not-So-Chilly Night which I really like – complex flavors and easy. I used more garbanzo beans than you called for and used Japanese sweet potatoes. SO good. I want to pass this recipe on to some good friends but can’t find it anywhere outside of the book. Can you help?
