Vegetable Harvest Celebration
Come celebrate harvest season with The Veggie Queen. She will gather the freshest vegetables of the day and combine them with other plant-based ingredients to demonstrate dishes that include salad, soup, main course and side dishes. You'll learn how to make appetizers and snacks such as Collard Crisps and Roasted Green Beans, soup such as Lemony White Bean with Greens, Fall Harvest Salad and a Provencal Vegetable Stew. Jill’s been using a pressure cooker for the past 10 years. She’s taught hundreds of people how to pressure cook successfully. As a Registered Dietitian and culinary educator with 20 years experience, her passion is teaching you the easiest ways to eat great tasting food—in almost no time at all.

Our delicious menu will include Easy Stock; Amazing Vegetable Soup; Heirloom Bean and Tomato Salad with Basil Vinaigrette; Seasonal 5-Minute No-Stir Risotto; Sweet and Sour Braised Vegetables with Spiced Quinoa and Quick Fall Fruit Compote with Figs and Walnuts

Going Gluten-Free with Whole Grains
This class is the first in a series of classes designed to meet your health and nutrition needs. I am providing a class introducing you to Gluten-Free cooking. Many people are finding out that they have either a sensitivity to gluten, which is found in barley, rye, wheat and wheat relatives such as spelt, farro, kamut and triticale, or celiac disease which can be life threatening. If you've been thinking of going gluten-free, then this is the class for you. This class is also great for anyone else who wants to learn how to incorporate more whole grains into their eating plan on a regular basis. I'll show you how to cook grains such as buckwheat, black rice, millet, amaranth, quinoa and more. I will prepare dishes from breakfast through dessert, and you'll get to sample all of them. Bring your appetite. I am a Registered Dietitian with more than 25 years of teaching people how to cook a variety of dishes that are naturally gluten-free.

Vegetarian Summerfest

The Raw, The Canned, and The Fermented
For the past 25 years, long-time Guild member and co-founder, Jill Nussinow, MS, RD, aka The Veggie QueenTM, has been teaching people about eating “real” food. She specializes in vegetarian, vegan, raw, and gluten-free eating and is an expert in pressure-cooking. Join us on Wednesday, May 25th, as we are welcomed back to the beautiful Relish Culinary Center for, “The Raw, The Canned, and The Fermented,” where Jill will demonstrate how to use a pressure cooker to prepare tempeh, and offer instruction on balancing cooked with raw and fermented foods. We will learn how to make simple fermented vegetables and Jill will open our eyes to a variety of prepared fermented foods available and how to use them. And as a bonus, Jill will share sprouts and how to do your own sprouting at home.

Freestone Fermentation Festival
Come join Jill and her fellow fermentation enthusiasts in Freestone for a wonderful afternoon of shared culture. Jill will be presenting a talk on what to do with a host of fermented products from miso to ume vinegar.

There will be artisan foods, speakers, exhibits, music and family fun. Additionally, the first People's Kombucha awards will take place.

Vegan Feast at Osmosis Day Spa Sanctuary
This is going to be a great event in a fantastic setting. If you've been meaning to take a trip to this day spa, this would be a great night to do it. The French Garden will provide vegan food. My friends at Thumbprint Cellars will provide wine and I will provide educational information.

Food, wine, education, entertainment and cedar-enzyme foot baths come with your $20 admission.

Going Green with Pressure Cooking

Preserving the Harvest

Come join Jill as she teaches you the art of preserving. When we have abundance as we do in the fall, it's time to put food away. It used to be that one of the only ways to do that was to "put food up", as in canning. But modern conveniences such as the freezer and dehydrator have come into play. This class will cover basic canning techniques, freezing and drying and touch on the process of pickling foods. Please bring any "extra" produce and we can put it up in class. Everyone will leave with at least 1 "canned" jar. If you have extra canning jars and lids, bring them to use or share. This is a hands-on class so come prepared to can - please bring an apron, sharp knife and wear close-toed shoes.
