Spicy Black and Green Soybean Salad

Serves 4-6

Making a main dish salad does not get much easier than this. You can prepare the dressing in advance and keep it in the refrigerator. When you are ready, just pour it over the other ingredients and let sit for at least 15 minutes.

1 cup fresh or frozen green soybeans (also called edamame), thawed if frozen
1 cup frozen corn, thawed
1 can black soybeans, drained
½ cup diced roasted red pepper
½ cup diced red onion
¾ cup canned diced tomatoes
¼- ½ teaspoon chipotle chile powder or 1 canned chipotle in adobo sauce
1-2 tablespoons vinegar
1 tablespoon lime juice
½ teaspoon salt
¼ cup chopped cilantro

Microwave or steam the soybeans and corn for a few minutes until cooked through. Drain and combine in a large bowl with the black soybeans, roasted red pepper and diced onion.

In a small food processor or blender, combine the diced tomatoes, chipotle powder or chipotle, vinegar, lime juice and salt. Blend until smooth. Pour over the soybean mixture. Let sit for at least 15 minutes, either refrigerated or at room temperature. Garnish with chopped cilantro.
