Salad with a Twist by Megan Faletra

For all the people out there who are gluten intolerant or have celiac disease and miss a good vegetarian wrap once in a while boy do I have a wonderful substitute for you. I recently discovered how to make the perfect lettuce wrap and have been making them for both lunch and dinner to satisfy my wrap (without the gluten) cravings. These wraps are fun to eat and are completely delicious, not to mention super easy to make. I literally could eat them every single night and not get bored because you can constantly be switching up what goes inside. But making the perfect lettuce wrap can take some experimenting. So here is what I have discovered to be the key pieces in making the perfect lettuce wrap.
- Double up your lettuce leaves. Whether you are using Boston or Butter lettuce like I have been or Romaine lettuce, make sure to double up your lettuce leaves. Otherwise when you go to pick up your wrap like a taco the bottom is going to fall out and you will have a mess on your hands. Literally.
- Use a spread: I noticed that my wraps hold together better if I have some kind of spread on the bottom. I have been using all different flavors of hummus spread across the leaves before adding any additional toppings.
- Make it colorful: Don’t fill your wrap entirely with the same color vegetable, mix it up a bit and your meal will be more enjoyable. It has been proven that we enjoy our food more if it looks more exciting.
- Don’t forget the protein: If you load up your wrap entirely with vegetables you are going to be left wanting more. Try adding some chick peas or some tofu to the wrap for some added protein that will be sure to satisfy you.
Don’t try to look attractive while eating this. You literally have to cup these in your hand like a taco and go into it full force. Most likely you will have some of your toppings falling out so make sure you have a fork on hand.
Go light on the dressing. I actually only add a little bit of salt to these or a tiny bit of olive oil. The hummus does a great job of dressing this up for me. However, if you couldn’t even imagine eating these without some dressing, use a light hand. If the lettuce leaves get too soggy they are going to fall apart. Remember, this is finger (or hand) food so you might end up with dressing all over you.
Enjoy! Be creative when making these because they are they are fun and exciting to assemble. For some reason this dish impresses people. I’m not exactly sure why because it basically is just a fancy way to eat a salad. For some reason, though, when I eat them I always leave the table feeling so much more satisfied.
